Aimee Hunter is the chef and founder of Prism Cafe in Tulsa, OK. After growing up in Grapevine, Texas and attending culinary school in Dallas, Aimee moved to the mountains of the West. While living in Colorado and Wyoming, she worked in national park kitchens, developed recipes around elk and venison, and honed her skills gutting and preparing river fish. After a few years of cooking for seasonal tourists, she decided to move to the ultimate tourist town: New York City.
Grateful for the early introduction to the farm-to-table movement she received out west, Aimee developed an interest in private cooking and pop-up dinners rooted in local foods and farms. While shopping for her clients as a personal chef on the Upper East and West side, she frequented the Union Square Farmers’ Market to come up with inspiring daily cuisine. Aimee went on to lead farmers market tours, created the first business featuring pop-up picnics in Central Park, and hosted several pop-up dinners all over Brooklyn.
Near the end of her stay in NYC, Aimee did consulting work for the famous music venue and bar/grill Alphaville, where she coined the term ‘Nugs’ for her award-winning chicken nuggets recipe. Her culinary escapades have been documented in several outlets including Vice Magazine, Flavorwire, Russh Australia and her own co-created culinary magazine, RARA.
A decade later, Aimee was called back to the West and moved to Petaluma, CA where she lived on a produce and sheep ranch. Here, she learned about holistic farming and animal husbandry, spent time with shepherds and farmers, and gained life-changing knowledge about the extremely difficult work that goes into tending the land and creating beautiful ingredients for chefs and high-end cuisine. Aimee’s deep respect for this work led her to become more interested in food activism and farming. Aimee became a manager of the Atwater Village Farmers Market in Los Angeles and spent 2 years dedicating herself to promoting local food and producers.
During all of these adventures, Aimee has remained a personal chef to the rotating communities around her. The pandemic led her to visit Tulsa where she began a community garden project with her dear friend Lindsay Aveilhe. Since then, the Aveilhe family has supported Aimee’s stay in Tulsa where she found a perfect spot to open her first ever solo restaurant and cafe: in The Heights historic neighborhood.
Prism Cafe will be an expression of all the roads Aimee has traveled to get here: the beauty of the natural world, the eclectic flavors of the big cities, the connection to farmers, gardeners and producers, the community dinners, the endless creative endeavors, the support for small craft makers, and the tireless promotion of local food and nutrients.
She hopes Prism will give a glimpse into the full spectrum of the wonders of the world, in food and beyond!
